Tofu Breakfast Scramble
If you love to have protein at breakfast, get your fix with this delectable protein packed, power breakfast!
*Take soft tofu out of its package and soak up all of the water with a paper towel.
*Cut the tofu in small cubes and add to a hot skillet with a drop of coconut oil. Smash the tofu with a fork while cooking it so it “scrambles” like eggs.
*While cooking the tofu add lots of turmeric, cumin, chili powder, garlic salt and pepper. I like a lot of these spices, but you just need to taste as you cook to see how much you prefer.
*Once fully mixed and heated thoroughly (I like to cook the tofu until its almost crispy on the outside) transfer to your plate and add Nutritional Yeast on top and fresh, sliced avocado or even cucumbers, if you want to add some crunch.
*Toast some fresh, whole grain toast or sourdough toast, slathered with Earth Balance butter and fresh jam OR spread some Vegan Treeline Cheese on the toast (http://www.treelinecheese.com/products/)
